Do you have a small holding or are you interested in home butchery? If you would like to learn about cuts of meat, how to cure your own bacon and make your own sausages then this is the right course for you.
"Butchers" Butchery Classes help you to understand how we source our meat and help you to learn some valuable butchery skills. In the class, you will be familiarized with a variety of seasonal cuts, used to show you a number of techniques and skills. We talk about different breeds, animal husbandry and how to shop for good beef. The Meat course is aimed at those who have had some experience of meat.
Our introduction course to butchery we cover will cover the following:
Identifying & Dividing into prime cuts
Identifying the less well known cuts
Boning and chopping chops
Rolling joints and tying butchers knots
We maintain small groups in order to make certain that you will have as much time as possible with the butcher in order to gain some skills. The classes on meats help cooks learn new skills and also, where the meats come from. We are running two courses, basic butchery skills and sausage and burger making. The courses will last for approximately 2 1/2 hours and will include a finger buffet and drinks. On the basic butchery course you learn how to prepare cuts of beef, lamb, pork and chicken.
On the sausage and burger course you will learn how to prepare cuts of pork and beef before mincing the meat adding seasoning then making your own sausage and burgers.
We ensure that you will have some hands on experience, closely supervised by our butchers. You will learn some basic skills with knives. In the Master Class, you will take a tour of our plant and gain some insights as to how the animals are raised and slaughtered. We provide a white coat to keep you clean and a chainmail glove to keep you safe. All you need to bring is yourself. You will need to be over 18, and able to stand for a couple of hours whilst cutting meat, chatting and having a great time.
